Preparing the sourdough starter
To begin, mix equal parts of flour and water in a jar and let it sit at room temperature for several days, feeding it with more flour and water daily until it becomes bubbly and active.
Mixing and kneading the dough
Combine the sourdough starter with flour, water, and salt to form a shaggy dough. Knead the dough until it becomes smooth and elastic, then let it rest for a few hours to develop flavor.
Proofing and shaping the bread
After the dough has rested, shape it into a round loaf and let it proof in a floured bowl or banneton until it doubles in size. This may take several hours, depending on the temperature of your kitchen.
Baking the sourdough bread
Preheat your oven with a Dutch oven inside. Once the dough has finished proofing, carefully transfer it to the hot Dutch oven and bake with the lid on for a portion of the time, then remove the lid to finish baking until the bread is golden brown and crusty. Allow the bread to cool before slicing and enjoying.
